Easy High-Fiber Protein Bars (No-Bake & Naturally Sweet)

These no-bake high-fiber protein bars are my go-to healthy snack. They’re packed with whole-food ingredients, deliver solid fiber, healthy fats, and moderate protein, and come together in ~ 20 minutes with no oven required. Perfect for post-workout fuel, afternoon energy, or a grab-and-go snack.

KIND Zero Added Sugar Bars were my inspiration. I really do like these bars, because they have no added sugar. But I wanted something made with more whole-food ingredients like chia seeds and flaxseed. Plus I was hoping for dates instead of allulose.

Unlike many store-bought bars, these homemade bars are naturally sweetened with dates instead of refined sugar or sugar alcohols. While these aren’t ultra-high-protein bars, they provide a balanced combination of fiber, healthy fats, and moderate protein to help keep you satisfied.

These no-bake bars are perfect for weekly meal prep since they keep well in the refrigerator and freezer.

Supplies Needed To Make High-Fiber Protein Bars

  2. Sharp knife
  3. Medium-sized bowl
  4. Food processor/blender (optional)
  5. Food prep gloves (optional)

Ingredients For High-Fiber Protein Bars

Makes 8 bars

  • 70g (1/2 cup) Pitted dates (I use Deglet Noor but you can also use Medjool)
  • 84g (1/3 cup) Natural peanut butter – no sugar added
  • 95g (2/3 cup) Lightly salted roasted almonds (you can also use raw)
  • 2 Tbsp Chia seeds
  • 1 Tbsp Ground flaxseed meal
  • 1.5 oz (3 squares) Ghirardelli 100% cacao unsweetened chocolate

Instructions For High-Fiber Protein Bars

Prep time: 15 minutes + chilling

Total time: ~60 minutes

Step 1. Prepare the dates: Place the 70g pitted Deglet Noor dates in a bowl and cover with hot water. Soak for 10–15 minutes until softened.

  • If you are using Medjool dates, which are naturally stickier, you can likely skip the soak step.

Step 2. While the dates are soaking, roughly (or finely, depending on your preference) chop the almonds.

For my first batch, I chopped with a knife on a cutting board. It worked perfectly well, but took more effort than using a food processor.

Step 3. Mix the dry ingredients: In a medium bowl, combine the chopped almonds, chia seeds and ground flaxseed meal.

Step 4. Chop the dates: Drain the dates well, then chop finely in a food processor.

Step 5. Add peanut butter to the chopped dates and blend into a paste. You can also mix by hand with a fork if you do not have a food processor.

Step 6. Combine everything: Add the date-peanut butter paste to the dry mixture. Mix thoroughly with clean hands (food prep gloves are optional).

Step 7. Place the mixture on a cutting board and press the mixture firmly into a brick approximately ½-inch thick and about 8 × 4 inches.

Step 8. Melt the chocolate and spread evenly over the top of the brick.

Step 9. Using a sharp knife, slice into 8 bars, roughly 1 inch wide each.

Step 10. Chill: Refrigerate for at least 45–60 minutes (or freeze for 15 minutes) until firm.

Storage: Keep in an airtight container in the fridge for up to 2 weeks or freeze for up to 2 months. They thaw quickly and travel well.

You can, but it will be harder to cut and the chocolate layer often cracks when cutting it after it has hardened.
